Totchos ingredients
- Tater tots – These are the base of the totchos, used like tortilla chips in traditional nachos, providing a crispy, golden foundation.
- Ground beef – You can use plant based crumbles to make this vegan.
- Flour – Helps to thicken the ground beef mixture, ensuring a rich texture.
- Taco seasoning – Adds a savory, spiced flavor to the beef; you can use store-bought or our homemade taco seasoning.
- Water – Used to moisten the beef mixture and help the seasoning stick.
- Shredded cheddar cheese – Melts over the top for a gooey, cheesy finish. We use Follow Your Heart for dairy free.
- Tomatoes – This adds a pop of color and flavor. You could also use fresh Pico De Gallo.
- Cilantro – This is our herb of choice, but if you don’t like it you can leave it out.
- Sour cream – Violife makes our favorite vegan sour cream.
- Guacamole – We love using our fresh guacamole recipe, but you can also use storebought.
- Jalapeño pepper – Adds a bit of heat, but you can leave it out if preferred.
How to Make Totchos
Cook the frozen tater tots according to the package instructions until they are golden and crispy.
In a cast iron skillet over medium heat, cook the ground beef.
Sprinkle the flour over the beef and use a potato masher to break the meat into small crumbles as it cooks.
Once the beef is no longer pink, stir in the taco seasoning and water. If you’ve drained the fat, add an extra 1/8 cup of water to maintain moisture.
Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally.
Remove the cooked tater tots from the oven and spread them out on a baking sheet or in the skillet.
Evenly top the tater tots with the seasoned ground beef and shredded cheddar cheese.
Return the dish to the oven and bake until the cheese is fully melted.
Remove the totchos from the oven and add your desired toppings, such as diced tomatoes, chopped cilantro, sour cream, guacamole, and sliced jalapeños.
Serve immediately and enjoy!
