    Baked Sausage Peppers Onions and Potatoes

    Our Baked Sausage and Potatoes with Peppers and Onions is the ultimate sheet pan breakfast. This is a completely vegan breakfast that is perfect for the holidays!

    In 2019 we partnered with LightLife Foods to create this delicious sheet pan breakfast on our instagram. We used their Plant-Based Italian Sausage and it is so flavorful! Lightlife Plant-Based Italian Sausages are juicy and have a meaty texture just like the traditional pork sausage, but they do not contain any pork.

    We love this easy breakfast so much that we make it every other week. We always enjoy making it for a quick and easy holiday breakfast. It’s so simple to prep and the easy clean-up and minimal dishes are a bonus.

    INGREDIENTS:

    • Lightlife Italian Sausages⁠ – You could use your favorite plant based sausage as well.
    • Red Potatoes⁠ – If you don’t have red potatoes we suggest using yellow / yukon potatoes.
    • Green Peppers⁠ – Don’t like the bitterness of green pepper? Try using red pepper for sweetness.
    • Onion⁠ – Yellow onion, unless you like sweet then go for vidalia.
    • Avocado Oil⁠ – This is a high smoke point oil and since we’re cooking at 450 degrees F it’s the best oil for the job.
    • Salt + Pepper⁠ – Optional

    HOW TO MAKE BAKED SAUSAGE PEPPERS ONIONS AND POTATOES

    1. Preheat your oven to 450 degrees F.⁠
    2. Chop the potatoes, peppers, and onions, and place onto a baking sheet.⁠
    3. Slice the sausages and set aside.⁠
    4. Toss the veggies with a little avocado oil and then season with salt and pepper.⁠
    5. Bake for 15 minutes and then toss. After tossing, add the sliced sausage.⁠
    6. Bake for another 15 minutes and then toss and serve.⁠

    Recipe Tips:

    • We love our potatoes with peppers and onions so much that we added this Italian Sausage, but you can add any other protein or veggies as well.
    • If you can’t find vegan sausage links you could also use sausage patties or vegan ground sausage.
    • Red potatoes and yukon potatoes hold up better and stay moist when roasting with this kind of dish.

    STORAGE AND REHEATING TIPS

    Store any leftovers in an air-tight container in the refrigerator and enjoy within 3-4 days. To reheat you can use your oven or air fryer at 350 degrees F for about 15 minutes or microwave for 3-4 minutes.

    HOW TO SERVE

    You could serve with your favorite plant-based favorites like tofu scramble, avocado toast and I even sauté up some mushrooms for those who love them as much as I do. We also like wrapping it up into a tortilla with some cheese as a vegan breakfast burrito.

    Can I use any plant-based sausage?

    Yes, we just suggest looking at the cooking directions in case it takes more or less time to cook.

    Is this good for meal prep?

    Yes! We enjoy it for up to 4 days.

    Can I make this without the sausage?

    Yes, you can just simply leave the sausage out.
