Just like you would roast pumpkin seeds and snack on those, spaghetti squash seeds are edible and make a great snack.  You can roast spaghetti squash seeds, butternut squash seeds, even acorn squash seeds.

how do I get the seeds from the spaghetti squash?

Cut the spaghetti squash open and then with a spoon scoop out the guts and seeds and place into a bowl.

Separate the seeds from the guts by hand. Thoroughly rinse the seeds and make sure there is no squash left on them before roasting.

Just came here for time and temperature for roasting ’cause I already knew the rest, but your notes inspired me. The seeds are in the oven right now with just a little olive oil and chai spices on them. It smells AMAZING! I know they’ll taste at least as good as they smell if not better. Thanks for the inspiration!!
