We love making mashed butternut squash. It’s full of flavor and naturally sweet. We make roasted butternut squash and then mash it up in our Vitamix blender for the creamiest and dreamiest mashed butternut squash.

We do puree this squash using our Vitamix so that it could work perfectly as a butternut squash puree as well. Add a little broth, and it’s a perfect soup!

Why you’ll love this recipe: Whether you love sweet or savory mashed butternut squash this recipe is a hit! It’s a great base that you can enjoy as is or add your favorite herbs, and spices. Don’t forget sweeteners like maple syrup or brown sugar.

    Recipe Tips:

    • Check out this post on how to cut butternut squash with step by step photos and video.
    • If you don’t want to cut butternut squash, you can find already cut butternut squash in your local produce department.
    • Use a potato masher for more of a rustic mashed butternut squash.
    • Add other ingredients to the sheet pan while roasting, like onions, garlic, and herbs.
    • For a rich roasted flavor, place the butternut squash directly on the pan and allow it to have some space. Doing so will result in a deeper flavor and more caramelization.
    • For a more subtle flavor, use a Silpat or parchment paper, and don’t worry about spacing as much.
    • Don’t toss the butternut squash seeds, see how to roast squash seeds.
