Some kids enjoy ham and cheese sandwiches, some enjoy peanut butter and jelly, my kid? She loves Cucumber Sandwiches with Cream Cheese! I’ve never been a fan of peanut butter and jelly, so naturally, it wasn’t something I made for our daughter.
I love a good homemade peanut butter or natural store-bought peanut butter, so that may be why I never liked the sugar-filled creamy stuff that my parents bought when I was growing up.
My kiddo declares this recipe as the best cucumber sandwiches! She loves the bite size pieces and it fits perfectly in her lunchox for school. I’ve also used some of the cucumbers from our cucumber salad for this sandwich before, so good!

If you don’t like cream cheese you could also use avocado, guacamole, ranch dressing, or even mix ranch dressing with the cream cheese for a flavored cream cheese. She likes her cucumber sandwiches plain and simple.
Ingredients for Cucumber Sandwiches
- 1/4 cup cream cheese
- 2 slices seeded bread
- 1 mini cucumber
- pinch of salt
How to make Cucumber Sandwiches
Spread the cream cheese onto the bread by using a spreader or butter knife.
Once the cream cheese is spread on both slices of bread start slicing the cucumber into thin slices.
Place the cucumber slices onto one slice of the bread.
Once the bread is covered with cucumber slices you can sandwich the pieces together and slice into desired shapes or sizes.
Cut off the crust if desired. (makes a great snack for me :-))
