    Colcannon Recipe

    This Vegan Colcannon Recipe is super delicious and packed with tons of flavor! The perfect side dish for St. Patrick’s Day or whenever you want some mashed potatoes with extra flavor!

    Colcannon is a comforting side dish that is great with any meal, not just on St. Patrick’s Day! We love the addition of leafy greens and the color and nutrients it brings to an otherwise simple mashed potato recipe.

    What is Colcannon?

    Colcannon is a traditional Irish dish that is made up of mashed potatoes with either kale or cabbage. We love using kale and green onions in our Colcannon.

    Not only does the kale give it a beautiful green color, but it’s a great way to get everyone to enjoy their kale if they’re not a fan of eating greens.

    Ingredients you’ll need

    • Russet Potatoes – you could use Red or Yukon potatoes as well, but we find that russet makes the best mashed potatoes.
    • Vegan Butter
    • Oatmilk – or you can use your favorite plant-based milk.
    • Kale – if you don’t like kale you could swap this out for cabbage.
    • Green Onions
    • Salt

    How to make Colcannon Potatoes

    1. Peel and chop the potatoes into chunks.

    2. Place the potatoes in a large saucepan and cover the potatoes with cold water, make sure the water is a good 3-4 inches above the potatoes.

    3. Boil the potatoes on medium-high heat for about 15-20 minutes.

    4. Chop the kale and slice the green onions.

    5. While the potatoes are cooking place the kale, green onions, milk, and butter in another saucepan and cook until the greens are slightly wilted.

    6. Drain the potatoes once they are fork tender and keep in the saucepan.

    8. Season the mashed potatoes with salt to taste and serve.

    Recipe tips and variations

    • This is an easy mashed potato dish that gets tons of flavor from cooked kale or cabbage with green onions. You can use either kale or cabbage, even both if you’d like the extra veggies!
    • You can use any plant-based butter or milk that you use in your home. You could also make this recipe with non-vegan ingredients if you desire.

    • Season the mashed potatoes with salt to taste and serve as desired.
