    Apple Cinnamon Pancakes

    Apple Cinnamon Pancakes with fresh granny smith apples with cinnamon in warm maple syrup will give you all the cozy feels of fall!

    We make these apple cinnamon pancakes just like our blueberry pancakes, but we leave out the blueberries and add more cinnamon. If you love pancakes you’ll also love our pumpkin pancakes which are another great fall breakfast.

    Pancakes are easy and affordable and you can easily add in your favorite flavors for the season. We love using seasonal produce and right we’re loving this recipe to use up our granny smith apples. Lightly cooked apples with cinnamon make a filling and delicious topping for pancakes.

    how to make apple cinnamon pancakes

    ingredients you will need:

    • flour
    • salt
    • cinnamon
    • baking powder
    • vanilla
    • maple syrup
    • milk
    • white vinegar or lemon juice
    • egg
    • coconut oil
    • granny smith apples
    • brown sugar

    In a small bowl combine the milk and vinegar (or lemon juice) and allow it to sit for 5 minutes, this will curdle the milk and turn it into buttermilk.

    Place the flour, salt, cinnamon and baking powder into a large bowl.

    Pour the buttermilk mixture, maple syrup, vanilla, egg, and coconut oil into the bowl with the dry ingredients and whisk until combined.

    Allow the pancake batter rest 5 minutes before cooking so it can poof a little so you get a fluffy pancake.

    Cook on both sides until fully browned.

    • Chop up apples and place into a small pan with butter. Add in brown sugar and a little bit of maple syrup.
    • Once the apples are tender add in the remainder of the maple syrup.
    • Bring to a boil and remove from heat.
    • Spoon over apple cinnamon pancakes and enjoy.

    You can use this apple topping for more than just pancakes. It’s great over oatmeal, ice cream, and yogurt too.

    which apples are best for baking?

    Our top pick is Granny Smith. You could also use Honeycrisp, Jonathans / Jonagold, Cortland, Braeburn, or Gala, but we find that the Granny Smith apple is the best for baking.

    recipe tips:

    • you can swap out the coconut oil for other fats, you can use melted butter or vegetable oil.
    • if you don’t want to add maple syrup into the mix you can the sweetener you prefer.
    • you can use any apples, but we prefer granny smith as they’re the best apples for baking, especially apple pie.
    • keep cooked pancakes warm in the oven while you’re making the rest – we keep them warm in our oven at 250 degrees F.

    Ingredients

    Apple Cinnamon Pancakes

    • 1 1/4 cup flour
    • pinch salt
    • 1 teaspoon cinnamon
    • 2 teaspoons baking powder
    • 1 tablespoon maple syrup
    • 1 cup milk minus 1 tablespoon
    • 1 tablespoon white vinegar or lemon juice
    • 1 egg
    • 1 tablespoon coconut oil

    Apple Cinnamon Topping

    • 1 granny smith apple
    • 1/2 teaspoon brown sugar
    • 1/2 teaspoon cinnamon
    • 1/3 cup maple syrup

    Apple Cinnamon Pancakes

    • Use a small bowl combine the milk and vinegar (or lemon juice) and allow it to sit for 5 minutes.
    • Combine the flour, salt, cinnamon, and baking powder into a large bowl.
    • Pour the buttermilk mixture, maple syrup, vanilla, egg, and coconut oil into the bowl with the dry ingredients and whisk until combined.
    • Allow the pancake batter rest 5 minutes before cooking.
    • Cook on both sides until fully browned on a greased griddle or pan.

    Apple Cinnamon Topping

    • Chop up the granny smith apple and place into a small pan with butter. 
    • Sprinkle in the brown sugar and a little bit of maple syrup.
    • Once the apples are tender add in the remainder of the maple syrup to warm up.
    • Bring the syrup to a boil and then remove from the heat.
    • Spoon the warm apple syrup over the apple cinnamon pancakes and enjoy.
