    Have you ever tried spaghetti squash? It’s like eating pasta without the guilt, plus its naturally gluten free. It’s lower in carbs and packs in a decent amount of vitamins, nutrients, and minerals. If you’re craving spaghetti, try this veggie swap! It won’t taste exactly like pasta, but with something as simple as marinara sauce the kids won’t mind.

    The best way to make stuffed spaghetti squashed boats is right after roasting the squash in the oven. Fluffy the squash with a fork to create the spaghetti and then add in your favorite fillings, toppings, seasonings, and sauces. Keep it simple or go wild, there’s no wrong way to enjoy this easy recipe.

    One whole roasted spaghetti squash will make 2 spaghetti squash boats. Two people can split one spaghetti squash boat, so you will get 4 servings from just one squash.

    We cook the spaghetti squash just like we did in our post on how to roast spaghetti squash. Slice it in half, scoop out the seeds, rub the inside with oil and then bake. It’s quick and easy and you’ll be hooked after making it one time.

    The cook time will greatly depend on what you stuffed in the squash. We stuff the squash right after we roast it so it’s already hot and ready. This is a simple spaghetti squash recipe using just mozzarella cheese and seasonings which takes no more than 10 minutes in the oven.

    Take cooked squash and then fluff it with a fork.

    Add in the butter, mozzarella, granulated garlic, and parsley.

    Mix the squash with the cheese and seasonings.

    Top the squash boats with more mozzarella cheese and bake for 10 minutes, just until cheese is melty. (Cook longer if you squash isn’t already hot)

    Garnish with freshly chopped parsley and enjoy!

    Have fun making these spaghetti squash boats to your liking. If you want a little heat you can add in some crushed red pepper flakes or even something as simple as black pepper. Other delicious add ins would be roasted garlic, spinach, broccoli, even roasted tomatoes!

    Ingredients

    • 1 cooked spaghetti squash
    • 1 tablespoon butter
    • 1 cup mozzarella cheese
    • 1 teaspoon garlic granulated
    • 1/2 teaspoon parsley dried
    • salt to taste

    • After cooking squash fluff with a fork.
    • Add butter, half of the mozzarella, granulated garlic, and parsley into squash boats and mix well.
    • Top the squash boats with remaining mozzarella cheese.
    • Bake squash for 10 minutes, just until cheese is melty. (Cook longer if you squash isn't already hot)
    • Garnish with freshly chopped parsley and enjoy.
