Whenever we’re making meals for a crowd we appreciate shortcuts. Something as simple as heading to our local store and picking up Barber Foods stuffed chicken can save us hours of prep and cooking, not to mention dishes. We’re fans of the classics and our family’s personal favorite is the Broccoli and Cheese stuffed chicken. I grew up with my mom purchasing that one the most and we loved it so much. It has chunks of broccoli and the cheese covering each bit of broccoli.
The chicken is so tender you could easily just use a fork, no knife needed.
When we’re serving a crowd another easy addition to the stuffed chicken from Barber Foods is mashed potatoes. We’re gearing up for holiday entertaining so I’ve finally perfected my Roasted Garlic and Mashed Potatoes recipe to share with you. It goes so well with the Broccoli and Cheese Chicken.
If you want you could also serve with broccoli, but we like to enjoy this with a simple side salad. Our salad is super simple and just has a drizzle of olive oil, balsamic vinegar, and a sprinkle of parmesan to finish.
Roasted Garlic Mashed Potatoes

- 3 Russet Potatoes
- 6 Cloves Garlic
- 1 Teaspoon Olive Oil
- 3/4 Cup Milk warm
- 2 Tablespoons Butter
- 1/8 Cup Chopped Parsley
- Salt and Pepper to Taste
Instructions
- Chop and boil the russet potatoes until tender.
- While potatoes are cooking place the garlic cloves into tinfoil and drizzle with olive oil, cook in a 400 degree oven for 10-15 minutes.
- Once the garlic and potatoes are done mashed together with the warm milk.
- Add in the butter, parsley, salt and pepper.
- Taste and season more if needed. Enjoy!
