why do you make purple mashed potatoes with skin?

Potato Skins contain a ton of nutrients, vitamins, and minerals. They’re easy to chew and mash easily when you mash the potatoes. If you don’t like the skin you can peel them, but we prefer to get all the benefits from our produce whenever possible.

You’ll get a decent amount of vitamin C, Magnesium, Phosphorus, and Potassium with each bite! these potatoes are loaded with antioxidants, phytonutrients, and may even help lower your blood pressure thanks to their high concentration of phytochemicals called chlorogenic acid. Check out this article where they are spotlighted by WebMD. They’re also high in fiber. Purple potatoes are an excellent swap for regular potatoes.

can I make this recipe vegan?

Yes! The only thing that contains something that would be of concern is the butter and milk and you can easily swap those out. Swap the milk out for almond milk or your favorite plant-based milk. For the butter, we highly recommend Miyoko’s, but you could use your favorite butter. Want to use cream cheese? We highly recommend Kite Hill. Both Miyoko’s and Kite Hill are soy free and plant-based vegan options.

where can I find purple potatoes?

Purple potatoes shouldn’t be hard to find in the supermarket. Most stores have purple potatoes as a part of their regular ordering. If you cannot find them in your produce section kindly ask for the produce manager. Most of the time the produce manager can let you know if they can order the item, if it’s not orderable, or if it’s out of stock.

It’s definitely a personal preference. We leave skins on whenever possible as they have nutrients as well. 🙂
