    These Purple Mashed Potatoes are beautifully and naturally colored. Make for a kid-friendly side dish, it tastes just like regular potatoes but loaded with antioxidants!

    Does your family love mashed potatoes? If so you’re going to love this colorful and fun purple mashed potato recipe! You can flavor them however you like, but we keep it simple with a little milk, butter, salt, and pepper.

    Wash and chop 8 purple potatoes, about 1 lb.
    Place the potatoes in a large pot and pour enough cold water to cover the potatoes at least 1-2 inches.
    Put the pan on the burner and cook on medium-high heat to bring to a boil.
    Cook until the potatoes are fork tender, about 15 minutes.
    Drain and return the pot back to the stove.
    Add in hot milk, butter, and season with salt.
    Using a potato masher, mash the potatoes until you reach the desired consistency.

    We like to serve the potatoes in a serving bowl and then top with a pat of butter, sprinkle with parsley, salt, and pepper.

    Yes! The only thing that contains something that would be of concern is the butter and milk and you can easily swap those out. Swap the milk out for almond milk or your favorite plant-based milk. For the butter, we highly recommend Miyoko’s, but you could use your favorite butter. Want to use cream cheese? We highly recommend Kite Hill. Both Miyoko’s and Kite Hill are soy free and plant-based vegan options.

    Purple potatoes shouldn’t be hard to find in the supermarket. Most stores have purple potatoes as a part of their regular ordering. If you cannot find them in your produce section kindly ask for the produce manager. Most of the time the produce manager can let you know if they can order the item, if it’s not orderable, or if it’s out of stock.

        It’s definitely a personal preference. We leave skins on whenever possible as they have nutrients as well. 🙂
