There’s no wrong way to enjoy this recipe. Enjoy it as is or chopped it up to add to your favorite pasta salad. We cook our broccolini until it’s just slightly browned. Going too far it will get too crunchy and if you go too far on the roasting it could become bitter. If you haven’t seen our post on how to roast vegetables we always follow the rule of giving our vegetables plenty of room to roast. Ensure that it can brown on all sides.
Try making pesto with our roasted broccolini – it has a delicious nutty flavor from roasting
To make broccolini pesto add some fresh garlic, lemon juice, and olive oil. You may not even need to add the garlic or even salt and pepper since you’ve already seasoned it.
Instead of boiling we prefer to steam or roast our vegetables. When you boil the vegetables you are losing essential vitamins, nutrients, and minerals in the water. The water is discarded and so are many of those essentials we want in our food.
what’s the difference between broccoli, broccolini, and broccoli rabe?
- Broccoli has thick stalks and large florets. This is the most common type of broccoli and easy to find in the supermarket year round.
- Broccolini is a vegetable that is a hybrid of broccoli and Chinese broccoli. It has slender stalks and smaller florets on top. It’s a little milder than regular broccoli, and best served when cooked. We prefer to roast, but you can steam, stir-fry, grilled and sauté for a delicious side dish or meal.
- Broccoli rabe also known as rapini can be very bitter. It will mellow some while cooking, but it will still have a bitter taste that is also nutty and a bit earthy. It’s used often in Italian cuisine with lots of garlic! Broccoli rabe has much more leaves than the other two.
