This Broccoli Mushroom Stir Fry is a delicious vegan side dish. You could make it for dinner by adding tofu, chickpeas, or even tempeh!
If you’re looking for something that is satisfying without ordering out this is it! Our family gobbles this broccoli mushroom stir fry up with spaghetti to act as lo mein noodles or rice. The best part is you can alter the recipe for those who are vegan and those who aren’t and everyone will enjoy!
You really could just enjoy this as is as a side dish with just the broccoli and mushrooms. Add more veggies if you like as well. Our favorite additions would be shredded cabbage, carrots, and thinly sliced red pepper, or celery.
CAN I USE FROZEN VEGETABLES?
You can save some prep time by using frozen broccoli florets. We put frozen broccoli in the refrigerator the morning of and then it’s ready to go. When we add the broccoli to the dish it cooks up quickly. There are also many stir fry mixes in the freezer section as well as the produce section. We do prefer using fresh mushrooms for this recipe.
IS THIS A GOOD MEAL PREP RECIPE?
Absolutely! You can take leftovers for work or even prep for the week. We’ll add more ingredients to bulk it up sometimes or just double the recipe. This should last about 3-4 days in the refrigerator. We do not recommend freezing this recipe. This is so quick and easy and you can save even more time by prepping the sauce ahead of time.
HOW CAN I ADD MORE PROTEIN?
Add your favorite protein and it can be a complete meal. Two of my favorite things to add is chickpeas or some air fried tofu. You can also add tempeh, vegan chicken strips, or animal protein for those in your family that aren’t vegan. This is such a versatile recipe and can please the whole family without cooking two different meals.
CAN I USE THE STIR FRY SAUCE FOR OTHER RECIPES?
Oh yes, the sauce is so delicious! You can use for roasted veggies like baby bok choy or any other stir fry creations not just this broccoli mushroom stir fry.

RECIPE TIPS:
- Slicing the mushrooms into bite sized pieces gives the dish a meaty texture.
- If you’re using fresh ginger you’ll want to heat it up with the garlic and onions.
- We use regular sesame oil, not toasted. Using toasted would give it a different taste.
- Use spaghetti to act as vegan lo mein noodles or gluten-free spaghetti. *Make sure products you are using for the sauce are gluten-free.
- Add more protein by using tofu, chickpeas, tempeh, or even a high protein bean or chickpea pasta.
- To reduce sodium use coconut aminos.
- If you want a thicker sauce to use without noodles or rice we suggest combining 1-2 tablespoons of cornstarch with 1-2 tablespoons of water and add to the sauce before bringing to a boil.
Broccoli Mushroom Stir Fry

- 1 medium onion
- 3 cloves garlic
- 1 tablespoon avocado oil use broth if oil free
- 24 oz baby bella mushrooms
- 1/4 cup hot water
- 4-5 cups broccoli partially defrosted, see notes
- 3/4 cup hot water
- 3 tablespoons hoisin sauce
- 1/3 cup soy sauce or coconut aminos
- 1/2 teaspoon ground ginger
- 1 tablespoon sesame oil use sesame seeds if oil free
- 1/2 lb cooked spaghetti
Instructions
- Slice the onions and mushrooms into nice bite size pieces and mince the garlic.
- In a skillet heat the avocado oil.
- Add the garlic and onions to the skillet and cook on medium heat until translucent.
- Add in the mushrooms and increase to medium-high heat. Pour in the 1/4 cup of water to help cook the mushrooms down.
- To make the stir fry sauce combine the hot water, hoisin sauce, soy sauce, ginger, and sesame oil in a bowl.
- Once the mushrooms are cooked you can add in the broccoli, stir, and then the sauce and stir again. Bring to a boil and allow the sauce to cook into the vegetables.
- Once boiling, add the spaghetti to the skillet mix to combine. Allow the noodles to cook in the sauce for 3-4 minutes.
- Serve as desired.
