    Persimmon Jam

    This Persimmon Jam is so easy to make and can be used as a spread on your morning toast, yogurt, or added to your favorite desserts.

    WHAT IS A PERSIMMON?

    Persimmons are red-orange edible fruit (berry) that grows from a variety of trees in the genus Diospyros. There are several persimmon varieties, but the ones you will find in the US are usually fuyu or hachiya. They can be found at your local Asian markets, Whole Foods, Sprouts, and sometimes other grocery stores.

    Persimmons are high in pectin, so they are excellent for making jellies and jams as they have that natural thickening agent.

    WHICH PERSIMMON SHOULD I USE FOR PERSIMMON JAM?

    You can use either the Hachiya or Fuyu Persimmon for jam. The main thing is you want to start with ripe and sweet persimmon. Otherwise, it can be unpalatable.

    For Hichiya Persimmons, you want to allow them to ripen fully; it should feel like a squishy tomato. You can let it ripen on the counter for a few days before using it.

    The Fuyu Persimmon is sweeter and can usually be used sooner as they aren’t as astringent. You can always tell it’s ripe when it’s nice and sweet and not too unpleasant to taste.

    INGREDIENTS FOR PERSIMMON JAM:

    • Fuyu Persimmons – You can use Hachiya Persimmons as well, but reduce to 5 persimmons as they’re larger.
    • Sugar – If you don’t want to use sugar, you can use your favorite sweetener but start with less and add more if you need more sweetness.
    • Lemon Juice and Zest – this really brightens the persimmons flavor and adds a nice tart note.

    HOW TO MAKE PERSIMMON JAM

    1. Wash, peel, and dice the Fuyu persimmons.
    2. Place the persimmons in a food processor and grind them until the texture is smooth.
    3. Place the persimmon puree, sugar, lemon juice, and zest in a small saucepan. Bring to a boil, then reduce the heat to low and simmer for about 15-20 minutes, stirring occasionally.
    4. Enjoy and refrigerate or freeze any leftovers.

    Recipe Tips:

    • If your Hachiya persimmons aren’t ripe, you can store them upsidedown on the counter for a few days until ripe. Fuyu persimmons should be able to be used right away.
    • Planning to make your persimmon butter with Hachiya persimmons? Buy them a few days in advance or get almost ripe ones.
    • You can also freeze persimmon jam, ensuring it has completely cooled before freezing. Add it to freezer bags, about 2 cups per bag, and lay them flat in the freezer. The jam can be stored frozen for up to 3 months. Thaw before serving.

    HOW TO STORE PERSIMMON JAM

    • Refrigerate: Store any leftovers in an air-tight container in the refrigerator and enjoy within 1 week.
    • Freeze: You can freeze persimmon jam for 4 months without a loss in flavor. Thaw the jam in the refrigerator and use it within the week if you froze right after making it.

    HOW TO SERVE

    We love serving Persimmon Jam on toast, over yogurt, mixed into baked goods, or even spread onto muffins. You can even use it as a filling.

    FAQs

    Can I make this recipe without sugar?

    Yes, you can also use coconut sugar, maple syrup, or agave nectar. Start with 1/3 cup of your sweetener swap and add more if needed.

    Can you eat persimmon skin?

    The skin is edible, but it’s not desirable in the jam.

    How much jam does this make?

    Due to the sizing difference in each persimmon, the yield will vary. We usually get anywhere from 6 to 8 oz in our mason jar.

    Notes

    • If you feel it needs to be thickened you can dissolve 1 Tablespoon of cornstarch into 2 Tablespoons of water, then pour the mixture into the jam. If you feel it needs to be thinned out, you can add more lemon juice or just a bit of water and whisk.
    • Yield will depend on how large or small your persimmons are in size. We usually get anywhere from 6-8 ounces.
