Greek Yogurt Breakfast Bowl with Blueberries and Pumpkin Seeds is what I consider a healthy breakfast.  The tangy greek yogurt, the sweet blueberries, nutty pumpkin seeds with a hint of salt equal the perfect combination for a breakfast bowl.

Whenever the supermarket is out of blueberries I cry a little inside.  So I’ll then opt for any of the other berries, but blueberries are my favorite for breakfast.

I recently switched my pumpkin seeds to a Go Raw version, still organic but raw and they have sunflower seeds in it too!  I also love to add chia seeds and ground flaxseed (both rich in omega 3s).  My daughter loves this Greek Yogurt Breakfast Bowl with Blueberries and Pumpkin Seeds as well.  She’ll gobble it up and ask for more once her bowl is done.  We’re very blessed that she sees fruits and vegetables as her favorite foods.  How many kids do you see bite into a pepper like it’s an apple?

Don’t get me wrong she loves junk food too, but for us junk food is dark chocolate, homemade vanilla ice cream or strawberry ice pops.  I think having her help while shopping and picking out produce really helps her understand her food.  I’m extremely excited for the warmer weather when we can start gardening, this year she will really understand that she can make food grow!  I find the best foods are without a label.  Reading a label can be scary these days.  It’s crazy how many ingredients they can get into a single item.  We always go for organic (USDA seal).

Back to the Greek Yogurt Breakfast Bowl with Blueberries and Pumpkin Seeds!  It’s a delicious healthy breakfast that your entire family will enjoy.  You can even pop it in the freezer for a bit and let it turn into a frozen yogurt breakfast.  So good either way!

Ingredients

  • 1 Cup Greek Yogurt
  • 1/2 Cup Blueberries
  • 1 Teaspoon Chia Seeds
  • 1 Teaspoon Ground Flaxseed
  • 2 Tablespoons Pumpkin Seeds

Instructions

  • Layer in a bowl in the order in ingredients.
  • Sprinkle a little Himalayan sea salt if your seeds aren't salted.
