    Grilled Chicken Wrap

    This Grilled Chicken Wrap recipe is a great wrap for meal prep. It is one of our favorite chicken wrap recipes, filled with grilled chicken, mozzarella, and our homemade roasted red peppers. We love that it can be served hot or cold.

    Healthy Grilled Chicken Wrap Recipe

    Whether you’re making yourself lunch for travel or at home, wraps are easy to prepare and bring for lunch. They’re handheld and you don’t need any utensils, which is a plus. Whenever we meal prep for the week I like to prep a few wraps. I start of by making some homemade roasted red peppers (see our tutorial on how to roast red peppers) and Chris will usually start making the grilled chicken. While he finishes off the chicken and the roasted red peppers are baking in the oven I’ll slice up some mozzarella for our grilled chicken wrap prep.

    Talking about prep, we like to buy a bunch of produce and prep it for the week. Once cut we usually use up produce within 3 days. It’s best to use your produce at its peak freshness to retain most of the nutrients.

    We like serving our chicken wraps with some quinoa chips and cucumbers. If we’re entertaining we’ll also whip up a tri color pasta salad.

    How to Make a Wrap

    Before picking the ingredients you need to choose your wraps. We usually go with a burrito flour tortilla. You can go with a smaller wrap size, but it will be hard to stuff and then wrap, the bigger the tortilla, the easier it is to wrap up.

    Don’t overstuff your tortilla. Too much filling will cause the wrap to 1. not close well 2. break the wrap.

    Pick your ingredients; any spreads should go onto the tortilla, then layer your ingredients. Try not to use too much moisture as it can cause the wrap to get soggy and break.

    How To Roll a Wrap

    Once your wrap is filled you’ll want to fold in the wrap on both sides of the wrap and then start rolling towards the other end of the wrap. Make sure as you are rolling towards the other side you’re covering the filling and pushing it towards the closed portion of the wrap. Doing it like this will make it so that both ends are sealed. Once you’re done rolling up your wrap you can then slice it in half or leave whole.

    Ingredients

    • 2 chicken breasts
    • 1 tablespoon olive oil
    • 1 tablespoon red wine vinegar
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/2 teaspoon basil
    • 1/2 teaspoon oregano
    • 1/2 teaspoon parsley
    • 1 ball mozzarella
    • 2 roasted red peppers, sliced
    • 6 burrito style tortillas

    Instructions

    • Take your chicken breasts and filet them in half.
      Place your chicken into a bowl top them with the olive oil, vinegar, salt, pepper, basil, oregano, and parsley.
      Coat the chicken evenly with the marinade and allow to sit in the fridge for two hours.
      Once you're ready to grill place the chicken breasts onto the grill and cook around 2-3 minutes per side and cook until the chicken reaches 165°F.
      Allow the chicken to rest before cutting.
      While you wait for the chicken to rest, start slicing up your mozzarella and then slice into your chicken after.
      Place the tortilla on a large plate or clean cooking surface.
      Layer the mozzarella, chicken, and roasted red peppers onto the tortilla.
      Roll the tortilla up and enjoy.
