    Chipotle Mashed Sweet Potatoes

    Thanksgiving recipes are usually mashed potatoes, candied sweet potatoes, turkey, green bean casserole, etc. We like to switch things up, especially when it comes to the vegetable side dishes during the holidays. Chipotle Mashed Sweet Potatoes give us a spicy side dish at the Thanksgiving table that everyone loves.

    Coming from a Latin background, of course, we like spice. Food is always plentiful around the holiday. Speaking of, when I make this for entertaining I make 5x the amount we shared for this recipe post, and it goes fast! We always have rice, beans, and you can’t forget the fresh guacamole. I even like to mix some guacamole into my chipotle mashed sweet potatoes. When I first had my wife at our Thanksgiving gathering she was confused where the potato salad and stuffing went hiding; now she contributes her staples to the holiday table with our big family.

    La Morena® Chipotle Peppers in Adobo sauce are a staple in our house. My wife got them one time, and then we had to have it in the house at all times. We only like to use quality ingredients, and that is what they offer at an affordable price. We have a few cans and go through about 2-3 cans a month. It’s a great way to add a huge flavor punch and of course some spice to a dish.

    My daughter is just like my wife and me when it comes to spice. It’s in her DNA. Her favorite meals are rice and beans and then she’ll eat these mashed potatoes with a shovel if she could.

    TIME SAVING TIP: Rough chop the sweets and toss in the pot with water. Once they’re not too hot to the touch you can easily peel the skin off. 

    Now when you use these keep in mind, they have a ton of flavor. I mean you are going to bump up the flavor with even a little bit of these chipotles. I like to use 2 in the mashed sweet potatoes and then one on top. I’ll chop the rest up and serve on the side for anyone who wants even more, and trust me people take it.

    Chipotle Mashed Sweet Potatoes

    Ingredients

    • 4 large sweet potatoes rough chopped
    • 2 chipotle peppers in adobo sauce chopped
    • 3 tablespoons vegan butter
    • salt to taste
    • *garnish chipotle pepper and cilantro
    Prevent your screen from going dark

    Instructions

    • Place sweet potatoes into a large pot and cover with water.
    • Boil potatoes until tender.
    • While potatoes are cooking take the chipotle peppers and puree them (using a little of the adobo sauce as well).
    • Drain the water from the sweet potatoes.
    • Mash the sweet potatoes with chipotle puree, butter, and salt.
    • Garnish and serve.
