Hold onto the squash and use your peeler remove the skin from the butternut squash.
Cut the squash in half separating the bulbous portion and the neck portion. Then cut both pieces in half lengthwise. Remove the seeds from the bulbous portion. Then slice the butternut squash into strips. After slicing into strips, stack the strips on top of each other and then slice again lengthwise. Now you can dice into cubes.
