Purple Mashed Potatoes
These Purple Mashed Potatoes are beautifully and naturally colored. Make for a kid friendly side dish, it tastes just like regular potatoes but loaded with antioxidants!

purple potatoes
1/2
cup
milk
2-3
tablespoons
butter
salt + pepper to taste
Instructions
Wash and chop the purple potatoes into cubes to cook.
Place the potatoes in a large pot and pour enough cold water to cover the potatoes by at least 1-2 inches.
Place the pot with potatoes on the stove and cook on medium-high heat to bring to a boil.
Cook until the potatoes are fork tender, about 15 minutes.
Drain the potatoes and return the pot back to the stove.
Add in hot milk, butter, and season with salt.
Using a potato masher, mash the potatoes until you reach the desired consistency.
Notes
To keep the potatoes extra purple try not to use too much water as the color will go from the potatoes to the water.
Bake the potatoes and then mash for even more vibrant mashed purple potatoes
