Pour the water into a pot and place it over medium heat. Add the sugar and stir until it is completely dissolved. Set aside to cool.
Once the simple syrup has cooled, add the syrup, strawberries, and lime juice to a blender. Blend until the mixture is completely smooth. If you prefer having bits of strawberries in your popsicles, reserve some berries and then pulse the blender with a few after the mixture is completely combined.
Pour the strawberry popsicle mixture into a popsicle mold. Then, add the top and insert the popsicle sticks.
Freeze the popsicles for 4-6 hours or overnight. Once frozen, you can remove the popsicles from the mold and place them into a freezer-safe bag for storage.

Ensure the simple syrup is completely cooled before blending it with the strawberries. This prevents any heat from cooking the strawberries which can affect flavor and color.
Adjusting the amount of lime or lemon juice can balance the sweetness and tartness to your liking. Taste the mixture before freezing and adjust if needed.
If the popsicles are difficult to remove from the mold, briefly run warm water onto the outside of the mold to help release them without melting the popsicles.
