Pour the water into a pot over medium heat, add the sugar and cook and stir until dissolved. Set aside to cool.
Once the simple syrup is cooled add the syrup, strawberries, and lime juice to a blender. Blend the strawberries until the mixture is completely smooth. If you like having bits of strawberries you can add reserve some berries and then pulse the blender with a few after the mixture is combined.
Pour the strawberry popsicle mixture into a popsicle mold and then add the top and the popsicle sticks.
Freeze the popsicles for 4-6 hours or overnight. Once frozen you can remove and place into a freezer safe bag.
