Vegan Coconut Oil and Fried Onion Mashed Potatoes
Our easy vegan mashed potatoes are the perfect side dish that everyone can enjoy. We make our dairy free mashed potatoes with coconut oil and lightly fried onions. It's an excellent recipe if you want to know how to make mashed potatoes without milk.
Servings 6 servings
- 2 Onions chopped
- 1/2 Cup Coconut Oil
- 5 Potatoes chopped
- Salt and Pepper to taste
In a large frying pan place in the onions and oil and fry on medium heat until they are lightly browned.
In a large saucepan, pan add the potatoes and bring to a boil, when they are fully cooked turn heat off and drain most of the water.
Once the onions are done, mash them with coconut oil into the potatoes and add in water just until the texture is to your liking.
Season with salt and pepper to taste.
