Ingredients
Marinade:
1cupfresh pineapple
2tablespoonsraw coconut aminos
1/8teaspoonground ginger
3clovesgarlic
Pork and Pineapple with Peppers:
4thin boneless pork chops
3tablespoonsraw coconut aminos
1red pepperchopped
1green pepperchopped
1small red onionchopped
1clovegarlicminced
pinchof fresh grated ginger
1cupfresh pineapplechopped
Instructions
In a blender combine the ingredients for the marinade.
Cover pork chops with marinade and allow to marinate for at least an hour.
Heat up a grill pan and and cook pork chops until cooked throughout.
In a large pan cook the coconut aminos, peppers, onions, garlic and ginger.
Once the peppers are getting soft add in the pineapple.
Chop your pork chops into bite size pieces and add into the mixture of peppers and pineapple.
