Purple Mashed Potatoes

- 1 lb purple potatoes
- 1/2 cup milk
- 2-3 tablespoons butter
- salt + pepper to taste
Instructions
- Wash and chop the purple potatoes into cubes to cook.
- Place the potatoes in a large pot and pour enough cold water to cover the potatoes by at least 1-2 inches.
- Place the pot with potatoes on the stove and cook on medium-high heat to bring to a boil.
- Cook until the potatoes are fork tender, about 15 minutes.
- Drain the potatoes and return the pot back to the stove.
- Add in hot milk, butter, and season with salt.
- Using a potato masher, mash the potatoes until you reach the desired consistency.

Try adding mashed purple cauliflower to these purple mashed potatoes — big time YUM! We also use some unfiltered, cold-pressed EVOO along with the butter for double the yum and extra health benefits. Try it! You’ll love it!

Whoopsy! Forgot to add that instead of milk we use some plain Greek yogurt — so good! And we also throw in some mashed roasted garlic as the whim strikes us — triple the yum!
